Are the embedded subtitles kept?

The primary track is kept. To choose a specific one, open the file in the full editor.
Can it handle a multi-gigabyte film?
Yes, and without uploading. But long films are memory hungry, so a computer is the better place for it. If it truly does not fit, the page says so clearly.
Is it fast?
It uses the hardware encoder, so usually less time than the film runs. If the MKV already contains H.264 or H.265, faster still.
Is anything uploaded?
No. Even a multi-gigabyte file is streamed through locally, never through a server.
